Recipe for Maui Coffee Gal's
Kale Salad w/Raisins & Pumpkin Seeds
1 large bunch of just-picked garden-fresh Kale
1/2 c. raisins
1/3 c. roasted & lightly salted pumpkin seeds
1) De-stem your kale if you prefer (would recommend for new raw kale eaters)
2) Chop kale in fairly small, bite-size pieces.
3) Add organic raisins, 1/3 c. of the dressing, and toss. Add roasted pumpkin seeds at last minute on top to keep crunchy.
Kale Salad DRESSING
1/2 c. + 2 T. extra virgin olive oil
1/4 c. combining these (3) ingredients to your preferred taste: Bragg's Organic Apple Cider Vinegar, balsamic vinegar, and lemon juice
Splash of maple syrup - start with 2 t. - to taste
1/2 t. dijon
1 small clove garlic
salt & pepper to taste
Whip in blender until light & creamy in texture.
SAVE remaining dressing in refrigerator for salad or to dip veggies.
